Pomegranate Dressing

This light dressing is great on leafy greens, quinoa, or however else you can think of. Enjoy the beautiful red color of pomegranate juice mixed with a hint of warming ginger. We recommend serving this dressing on our Autumn Salad for a party pleasing bowl of festive greens.


Pomegranate Dressing

Prep time: 5 min.

Makes: 8+ ounces

 

Ingredients

  • 1/2 cup unsweetened pomegranate juice 

  • 1/4 cup apple cider vinegar

  • 1/4 cup extra virgin olive oil

  • 2 Tbsp. maple syrup

  • 2 - 3 tsp. fresh grated ginger 

  • ¼ tsp. sea salt

  • Black pepper to taste

 

Directions: 

Combine all ingredients in a jar and shake, shake, shake to emulsify. Taste and add more pomegranate juice or ginger, as needed.


Pro Tips

Prep: Make up to 2 days in advance.

Storage: Dressing will keep for 5 - 7 days in a sealed container in the refrigerator.
